Sweet Potato Casserole

Don’t tell me you don’t like sweet potatoes. These aren’t your average sweet potatoes. This is really a desert but I serve it at dinner. I received this amazing recipe from my older sister a few years back. Every time I make it people ask for the recipe. You will want to double it and freeze the extra uncooked. It is amazing and yes my sister is an amazing cook.

Sweet Potato Casserole

3 C. cooked, mashed sweet potatoes (peel and boil just like regular potatoes)

1 1/4 C. white sugar                          2 eggs

dash of cinnamon                           3/4 C. butter

1 can sweetened condensed milk

Mix ingredients well. Pour into a buttered baking dish. Bake for 20 minutes at 400 degrees F.  uncovered. Remove and sprinkle topping of

1 C. crushed Ritz crackers

1 C. chopped pecans

1/2 C. brown sugar

1/2 stick of butter

melt butter and stir in brown sugar, add Ritz and nuts – mix well until crumbly.

Bake for another 15 minutes.
